Lion’s Mane Mushrooms (Hericium erinaceus) are a unique and highly prized variety, known for their shaggy, cascading spines and mild, seafood-like flavour often compared to crab or lobster. Their distinctive appearance and texture make them a gourmet favourite in dishes such as stir-fries, soups, and even vegan "scallops" or "crab cakes".

These mushrooms prefer cooler temperatures (16–21°C) and high humidity (85–95%) with low to moderate light. Good fresh air exchange is essential for proper spine development and to prevent the formation of dense or deformed fruiting bodies.

They grow best on hardwood sawdust, ideally supplemented with bran or other nutrients to support strong growth and high yields. Prepared mushroom substrate or sterilised hardwood-based blocks also work well. Always ensure the substrate is fully sterilised and cooled before inoculating with spawn.

Lion’s Mane typically colonises its substrate in 14 to 21 days, with fruiting usually beginning within 7 to 10 days after colonisation. In optimal conditions, you can expect your first harvest in around 4 to 5 weeks from inoculation.
